Desiccated Coconut Recipes



CALYPSO KEBABS

Preparation: 20 minutes
Cooking:: 5 to 8 minutes
Calories per kebab: 130

INGREDIENTS:

For 4 kebabs:

2 Courgettes

1 Red pepper

2 Pineapple slices

2 Apricots

100 grams (4oz) Small buttons mushrooms

50 grams (2oz) Butter

2 teaspoon Chili sauce

2 teaspoon Ground corinader

4 teaspoon Dessicated coconut

 

PROCEDURE :

Cut courgettes into fairly thin slices. Cut pepper, pineapple and apricots into chunks. Thread fruit and vegetables onto long skewers with mushrooms. Melt butter in an old saucepan on barbecue. Stir in chilli sauce and coriander. Brush kebabs with spiced butter and cook on barbecue for 5 to 8 minutes. Turn occasionally and brush with butter. Sprinkle with coconut before serving.

Good served with:
Rice and bean salads

Cook's tips:
Courgettes take longer to cook than the other kebab ingredients so cut into slices rather than chunks for even cooking.
